On really, really, good cheese I found a couple of days ago is the Blåmandag from Den Blinde ku (the blind cow).

While hanging around at Mathallen picking up a small sample of cheese at the cheese-desk, I stumbled over this little piece of gold.

The taste is strong. Quite strong. It has the characteristics of the typical blue cheeses. And the typical disgusting look. At least as long as it is in the cellophane packaging. Once you cut it open it is turning back to normal.

The consistency is medium hard. Just at the border of being soft enough to be even spread out on a slide of bread and to be cut with a knife. Basically: the slice of bread looks like a war zone afterwards. Craters the size of of an egg next to mountains of cheese.

Maybe I should take it out of the fridge a bit earlier next time?
